CHAMPAGNE DOYARD
Here, we have been winegrowers since 1677 and harvesting and handling for 4 generations. The wines produced on this estate have the particularity of being partially or totally vinified in oak barrels. It is possible to visit all the installations: the press, the vats, the cellar, the cellar, of course, and to discover the different tasks that the winegrower must accomplish in the cultivation of the grape and the elaboration of the champagne: pruning, the lierie, disbudding, trellising, trimming, harvesting, racking, blending, etc. Since 2010, Doyard Champagne has been part of an association called Les Artisans du Champagne, which brings together 16 Champagne winegrowers and craftsmen. Six different vintages are available as well as an excellent ratafia:
Cuvée Vendémiaire brut Premier cru: 4 years of ageing. Chardonnay grape variety (white grapes) 100% exclusively from the Côte des Blancs.
Cuvée Vendémiaire extra-brut Premier cru: 6 years of ageing. Chardonnay grape variety (white grapes) 100% exclusively from the Côte des Blancs.
La Libertine: more than 12 years of ageing. The objective of this cuvée was to get closer to the taste characteristics of sparkling Champagne wines from the early 18th century. Libertine is unique and does not come close to any current champagne.
Œil de Perdrix Grand Cru: this cuvée takes its name from ancient times (18th and early 19th centuries) when the impossibility of artificially "bleaching" the juices of the black grapes led to the production of a Champagne with a colour tainted by an "eye". This one referred to a champagne slightly tinted with pink, like a partridge eye. Origin of the grapes: Chardonnay from the Côte des Blancs and Pinot Noir from Aÿ.
Clos de l'Abbaye Millésime Premier cru 2012: Clos de l'Abbaye comes from a half hectare plot of chardonnay, isolated and planted in 1956. Its location and its very calcareous soil give it a very early ripening period. Grape variety: 100% Chardonnay.
Blanc de Blancs 2009 Grand cru: 2009 vintage. Chardonnay grape variety 100% Grands Crus (Mesnil, Oger, Avize, Cramant).
Ratafia: this one is aged 18 months in barrels.
