Kaage celebrates the soul of the Maldives through a collection of recipes gathered from the north to the south of the country. The menu features dishes prepared by housewives in their own kitchens, and honors the basic ingredients of Maldivian gastronomy. Bananas, coconuts, tuna and rihaakuru (fermented fish paste) are the mainstays of Maldivian cuisine, and feature in many recipes. Some of them are inspired by recipes from other continents, but with a very local twist, like this tuna carpaccio. A real delight!
