After all, India is only a stone's throw from Noonu Atoll. So it's hardly surprising that recipes from the subcontinent have found their way here. The chef, who hails from southern India, has reinvented some of the great classics, lightening them up and adapting them to the palates of Western tourists. You can enjoy dhai puri (small balls stuffed with chickpea purée, spices and yoghurt), malai chicken tikka (a dish without chilli) or paneer seasoned to your liking. And don't forget that nothing beats a lassi to soothe the spice fire!
