Dating back to 1674, this sugar mill could extract up to 20,812 liters of cane juice per week in favorable wind conditions. Although its mechanism is still intact, it is not functional, as the sails attached to its wings were torn off during a storm. You can visit the interior of this solid building made of stones held together by a mixture of egg white and coral dust. A large wooden beam was used to turn the top of the mill according to the direction of the wind, and required 12 slaves to turn it.
