While Cyril Escrihuela has been based here (right next to the cathedral) for a few years, our host trained with Alain Ducasse. At his table, you'll enjoy mainly local products. And always organic. For the house's credo is clear: favor short circuits, and return to the simplicity of the dishes of yesteryear. In the end, a limited choice, but inevitably a lot of flavors. Like the œuf cocote with cheese sauce, followed by a potato gratin with pumpkin purée and beluga lentil caviar. Excellent.
