In nature, the eagle is a hunter. In this house with its typical decor, the menu is inspired by its name on the front, offering a fine range of game dishes, such as marcassin steak with Morello cherries or civet. We work with the seasons, with appetizing suggestions such as fresh asparagus with two sauces or a ballotin of plaice fillet with lemongrass. The daily menu includes a verrine of grapefruit and crab, followed by beef pavé and a slice of vacherin. On the à la carte menu, the tournedos with morel mushrooms is outstanding. Most dishes are homemade, reminding us that cooking is an art to be passed on. L'Aigle d'Or fulfills its role in this respect.
