Well-known in the Thur valley, this Vosges hotel in the heart of Saint-Amarin is also worth a visit for the cuisine of its chef, Patrick. In a rustic and convivial setting, it's customary to come and enjoy a home-made tarte flambée between two hikes. The trout, as fresh as can be (and for good reason, it comes from the in-house fish tank), is to die for: topped with cream, lardons and onions, it's presented on a bed of sauerkraut with steamed potatoes. Meat lovers can opt for the Cheval Blanc's other specialty, the shank cooked in broth and then oven-roasted. On weekdays, the lunchtime menu (one main course, one drink, one coffee or one main course, one dessert, one glass of wine, one coffee) generally doesn't disappoint. Please note: the beef is always local and all desserts are homemade! Hotel guests who choose to take a day trip are treated to a generous picnic lunch specially prepared by the chef.
