BIECHER & SCHAAL
The Biecher wine house, located in Alsace at the foot of the Haut Koenigsbourg since the th century, is well known and its activity is spreading in many countries. Wishing to revive the beautiful family historical cellar, Olivier Biecher, a leader of the Biechern house, joined Julien Schaal, a winemaker who travelled through the vineyards of France and the world, and both lovers of Alsatian vintage wines. Since 2011, they have produced wines that are a real ode to Riesling and to Alsatian soils: Grand Cru Kastelberg, Grand Cru Rangen, Grand Cru Rosacker, Grand Cru Schlossberg, Grand Cru Sommerberg, Grand Cru Altenberg, Grand Cru Steinert. The team has been enriched for some time by Sophie Bollaert and John Seccombe, acquired in Burgundy and South Africa, respectively. The grapes are vinified in the most gentle way, hand picked and brought to the cellar in trays of 25 kg, the pressing times (12 hours minimum) and fermentation (up to four months) are very long, to promote the aromatic expression of the juices.
