Founded in 1953 by Henri Mahéo in the heart of Paimpol Bay, the Paimpolaise du Large still produces the oysters that have made her famous: hollow oysters, reared according to ancient methods, and flat oysters, a rarer species, reared on the ground in small quantities. In order to adapt to the growing demand, it also markets Bréhat mussels, farmed in the open sea for a minimum of one year, as well as abalone, scallops, Breton lobsters and clams, fished on the Breton coast.
