In Neubourg, a commune associated with Dauendorf, Mathieu has been offering cow's milk cheeses for about ten years. He works exclusively with breeders in the vicinity, in the Bas-Rhin. As soon as he receives the milk, Mathieu carries out the five processing operations to obtain the cheeses.
