On the outskirts of Saint-Quay, nestled in the hollow of a valley, this restaurant occupies an old mill, renovated in a contemporary, refined and vintage style. Its large bay windows overlook the stream below and the organic vegetable gardens that partly supply the kitchen. Here, the ambitious young team, led by two brothers (one in the kitchen, the other in the field), gives pride of place to vegetables and ultra-fresh seafood, sublimated in bold, controlled ways, as with this filet of pollack with black garlic eggplant purée.
