The restaurant at the Hôtel Edgar is one of the finest in Brioche. Chef Sébastien David offers an inventive and masterful cuisine. The careful accompaniments and seasonings surprise and delight. We tried the straw-fed pig, which comes in three exquisite varieties: confit knuckle, smoked belly and pig's trotter cromesquis... For starters, the piece of mackerel with coconut emulsion and pickled beet had already delighted us. For dessert, the roasted fig brought the feast to an excellent close. Pleasant service and cosy surroundings.
