Chez Hervé is one of the finest wine shops in the West of France. Listed in Gault & Millau, oenology is in his DNA, and coming to his cellar to listen to him talk about his wines is an experience in itself. He regularly organizes tasting meals around inspiring themes, wine courses to pass on his passion, and master classes to discover new grape varieties. With him, everything happens live, and he has that unique ability to grab you and lead you to discover the wine that's right for you and your palate.
As for his cellar, it would make any wine connoisseur green with envy. Each of his wines is carefully selected, during trips to meet the winemakers and discover not only the grape varieties, but also the people behind them, to learn about the temperament and history behind each bottle. Very much involved in organic winegrowing, he also has a number of fine biodynamic wines to enjoy without added sulfites. There's also an ageing cellar for wines, an impressive list of whiskies and rums, and champagnes from family-run cooperatives. An address not to be missed by connoisseurs and connoisseurs alike.
