Japan as you were there. With Romain Paillet at the helm, you'll remember the trip for a long time to come. Destination: fresh fish from the catch of the day. Pollack, red tuna, matured fish... arrivals are sourced from the Concarneau and Le Guilvinec auctions. Vegetables come from Le Pelleter and nearby markets.
