Katsuobushi is a dried, smoked and cured or fermented fish made from skipjack. It is a staple food in Japanese cuisine and is used to prepare the traditional "dashi" broth, which is used to make miso soup. It can also be used as a topping for rice, pasta, rice balls and vegetables. The Makurazaki company produces katsuobushi directly in Brittany, in order to enhance the cuisine of Japanese restaurants that are successful in France. Also present in some shops and culinary events.
