Le Palais des Spores is Olivier's organic mushroom farm. This passionate agriculturalist and mushroom enthusiast decided to embark on this rather crazy project following a simple observation: the Alsatian button mushroom didn't exist! So he took over 300 square meters of an old beer storage room from the former Colmar brewery, which had been used as a mushroom farm for many years, right up to the 1960s. The Alsatian button mushroom was born!
