Come to this granite house of character, perched on the banks of the Vilaine River, and discover a cuisine of the moment, of instinct, creative and subtle. Michelin-starred chef Sylvain Guillemot draws his inspiration from the seasonality of raw, authentic local and coastal produce. Here, the producer takes pride of place with exceptional menus: cockles, yuzu, eggplant gnocchi and zucchini purée, onion ravioli and Thai lemongrass, roast duck, beet and sorrel, rhubarb pressé, baba fig, coconut ginger ice cream. The sommelier, Isabelle Jumel, gives us the right advice. Everything is in harmony, right down to the winks in the clothing.
