In Aurélien's smokehouse, salmon, spice-rubbed beef brisket and tofu develop their flavors for hours, before being baked in Shokupan, an ultra-soft Japanese bread pudding. The house specialty: Marcello with smoked meat, onions and sauerkraut. Serve with seasonal vegetables or a Mac & Cheese revisited with pistou sauce with garlic confit and dehydrated black olive powder. Original and generous! For dessert, travel withapple pie or Chicago Style cheesecake. The discovery continues at the aperitif, where spicy kimchi and pickled eggs are accompanied by a Morbihan beer.
