If the Rue Nantaise is full of good restaurants, the Bistrot des Remparts is a major contributor to its reputation. The restaurant's watchwords: local, fresh, homemade and traditional. Chef Antoine Graffin creates a limited menu, which changes every month and doesn't leave vegetarians out in the cold. You'll love the vegetable-stuffed cabbage with carrot, chestnut and parmesan cream, the lamb shoulder confit with parsnips, pumpkin and hazelnuts, and the hazelnut financier with dulcey ganache and homemade praline ice cream. Special mention for the wine list, most of which is organic or biodynamically grown. A fine address in a neighborhood teeming with good produce.
