Its bistronomic cuisine evolves with the seasons, using market produce, often local, accompanied by fine wine suggestions. The seven-hour lamb medallion confit with its mousseline of pumpkin, seasonal mushrooms, pecan nuts and squash chips is a hit, and it's easy to see why!
