Everything is organic and local: cold meats, vegetables, jams, smoked salmon, apples, cheeses, ciders... Creative recipes for buckwheat pancakes pay tribute to the region's gastronomy, like the Bretonne with its home-made sausage, Entrammes tomme, onion confit and old-fashioned mustard.
