Le Saison offers a high-flying Breton stopover. Chef Ronan Kervarrec, winner of two stars in his previous establishments, intends to return to his roots, drawing on his childhood culinary memories to create harmony and emotion in his dishes. His influences are drawn from the scents of the sea. At the heart of the season, the flavors become iodized: lobster medallion flambéed with Breton whisky, crispy pig's trotter with wakame and pepper seaweed, Maso farm pig, chipolata, confit breast and puffed rind, garlic and chimichurri juice, or the childhood gavotte, now the house's signature dessert.
