This Michelin-starred restaurant, known as Coquillage, is located in a 1920s villa, Château Richeux, overlooking the sea and with a view of Mont Saint-Michel. Hugo Roellinger, celebrated on the coast for the refinement of his cuisine, honors the culinary arts here. On the menu, a succession of delights throughout the service. As the winds and the moon blow (first menu), but also sheltered from the waves (second menu), we savor marvels such as a pearly-smoked saint-pierre accompanied by an emulsion of octopus tentacle, cauliflower and black cardamom. Magnificent!
