Let yourself be tempted with the duck foie gras compressed with pears, red wine jelly with sweet spices or a roast lobster or a roast blue lobster, carrots of sands with curcuma butter. In dish: cushion of farm veal, juice of roast in coffee flavour, mushroom viennoise, red beetroots, Pommes Soufflées, or a aglet of St.Pierre with algae and yuzu enamelled a butter to the algae and yuzu, broccoli emulsion.
