Located in Languidic, Brittany, Le Ruyet David is a manufacturer of soft wheat-based culinary specialties. David Le Ruyet, farmer and manager of the family farm, grows high-quality soft wheat with respect for the environment. Le Ruyet specialties, characterized by their beautiful amber color, are already appreciated by top chefs for their unsuspected flavor. The pasta is made from type 80 ultra-fresh soft wheat flour, organic egg whites and milk, and Guérande salt. The production process is entirely artisanal, involving grain sorting, slow grinding in a stone mill and extrusion of the pasta into bronze molds. The pasta is then slowly dried at low temperature to preserve its quality.
