Since 2016, with his wife Manon, he welcomes you in the bucolic setting of Kerstéphanie around gastronomic creations based on local seasonal ingredients. A glimpse? Salmon gravlax with gin accompanied by a salad of sour beans, goji berries and pickles, orange paste and spiced caramel or poached pollack and steamed celery in chervil broth, celery mousseline, vegetable juice with butter sauce.
