Restaurant nestled in a completely renovated basement, which offers an inventive and refined cuisine.

With a wealth of experience in the south of France, Brittany and Switzerland, Thibaud Schouten chose to open his own restaurant in 2018, in an atypical space in the medieval city that inspired him from the first glance. Today Le Sous-sol welcomes you in a contemporary decor dressed in old stones, around a market cuisine, inventive and refined. The menu is renewed every day according to the arrival of new products and the seasons, and the menu is changed every month, giving free rein to the chef's rich inspirations.

Nous avons déjeuner à 4 dans un cadre pas prétentieux mais raffiné dans un sous sol lumineux. Le service est discret et efficace dans une vaisselle en grès de très bon goût. Dans l’assiette originalité et équilibre sont de rigueur même le café est délicieux!!

Des plats d’une finesse avec des accords subtils avec les vins, un personnel présent et attentif.

Un jour de pluie à Vannes , content de se poser dans ce sous-sol très accueillant et calme. Les plats sont très raffinés , et originaux. Le service discret et souriant à l'image du lieu. Et petit clin d’œil pour les habitants du 04 que nous sommes la carafe Bardouin en décoration. Merci pour ce bon moment.
