Established in Vannes in 2024, Arnaud Tavares' Nomad restaurant has all the makings of a great one. The young man, a tireless traveler before the Eternal, offers traditional French cuisine blending flavors, textures and techniques from the ends of the earth, like binchotan cooking - which he masters like a chef - named after the evergreen Asian oak charcoal used as fuel, particularly in cooking, for four centuries. Le Petit futé recommends (among other dishes) the binchotan mackerel fillet with artichoke and tonnato sauce.
