FERME-AUBERGE DE FAYE
Farmhouse in Brantôme-en-Périgord serving specialties: foie gras, duck breast and inventive dishes.
Marie and Claude Dubuisson took over their parents' farm. In 1988, they started force-feeding ducks and making farmhouse preserves. They themselves grow the corn used to force-feed the ducks, and the wheat and plants to feed them. In 2000, they opened the farm-inn in an old restored barn. Among the specialities: foie gras, duck breast with onion jam, stuffed duck leg, as well as dishes invented by Marie such as the quiche périgourdine made with duck aiguillettes, ceps and foie gras.
