CHRISTIAN THIROT-FOURNIER
The area of Old Plum covers about 65% hectares in sancerre, on slopes sometimes reaching: 7 ha planted with sauvignon (calcareous soils) and 3 ha of Pinot noir (clay-clay soils). The range includes two red, two white and one rosé. The whites ferment for days, spend a few months of rearing on fine plots and are bottled. " P'tite Costs " (small slope), resulting from better-oriented plots, offers more depth and aromatic richness. The reds are produced from égrappés grapes for days; one, from vines aged 15, is to drink in his youth; the second, coming from vines over 20 years old and raised in oak barrels for 12 months, will be able to age.
