In 1953, in the village's baker, a baker, Jacques Fleurier, made a mistake in the recipe his father asked him to prepare. At that time, there is no question of throwing the goods: the sablé sablé was born. In 2008 a new workshop devoted only to the production of sanded and meeting the standards in force was opened. A modern structure to continue making the Nançay patties in a way that is always as artisanal as they are in respect for their taste and quality. All that makes the little cake at once crunchy, friable and founded in the mouth, is a moment of gourmet pleasure. Since then the mythical bakery has changed hands, and even if the magnets are still good, the shop is only one distribution point like the others. The traditional paper bag in the arms of the nearby radio astronomy station has been replaced by a banal and environmentally-friendly bag of white plastic. Part of the dream is undone, but the patties remain.
