The Crottin de Chavignol Union is an association that brings together all goat farmers and cheesemakers from AOP-AOC Chavignol. Its role is to guarantee compliance with the specifications of the appellation in its authenticity and its specificities. The Chavignol is an Appellation of Origin controlled since 1976 and Designation of Origin protected since 1996 (AOC is a national recognition whereas the AOP is its equivalence at European level). These designations offer a guarantee of origin of the product and its traditional manufacturing methods. They give cheese all its specialization. The land, the richness of the flora and the know-how transmitted from generation to generation give a unique and generous chavignol.
