Since 1896, Dubois-Boulay has been maturing crottins with the utmost care. Every year, two million crottins are matured in this cheese dairy, which has become a veritable institution. If you can't visit the factory, you can go to the store to buy crottins according to the desired maturity, from very fresh to semi-dry to soft blue. What should you choose? Here's a (very) gourmet tip: take them all! And don't forget: next to the Chavignol store, a small museum (free of charge) retraces the various stages in the cheese-making process.
