But he also exploits a thousand olive trees and since 1999 he has acquired his own mill. Olive oil consists of an assemblage of aglandau (25%), brown (15%), cayon (25%), salonenque (10%), with the remaining 25% being composed of cunner, bouteillan, grossane, picholine, cailletier, and lucca. It's a rather thick, very smooth oil with a fruity, fruity type.
