From February 20 to March, this joyous carnival attracts thousands of people to attend the Gran Cabalgata.
This is surely the most joyous of all Spanish carnivals, attracting thousands of people every year. A month in advance, the various groups prepare for the event, and the peñas, or associations, offer a taste of some of the fundamentals of Gaditan gastronomy: doughnuts for the pestiñada, sea urchins for the erizada, and oysters for the ostionada. Dressing up is a must, and the highlight is the Gran Cabalgata, held on the first Sunday of Carnival. The Cabalgata del Humor takes place on the last weekend.
