FROMAGERIE HARDY
Hardy Cheese Factory was born in the post-war period, before being taken over by Michel Passat in 1997 and affiliated with Tradition Cheesemakers (Triballat-Noyal Group). Since 2007, the company has specialized in the refining of cheese from farm goats. Hardy collects his cheeses from farmers from three zones: Sainte-Moorish-de-Touraine, Valençay and Stool-sur-Cher. Beyond these three AOP, Hardy Ripener extends his range of farm goats. In 2011, 320 tonnes of cheese were refined, 220 of which were for PDO. The three designations are naturally in good place within the range. On the margins, we find the range of Spécialités specialities to the full complet: bonde, cabri, biquet, pavement and heart.
