Maxime Valleye has opened a new gourmet restaurant in Romorantin. Trained in renowned establishments, he puts into practice what's closest to his heart in this pretty restaurant. He named it after the birch trees, emblematic of the Sologne region he loves. For his cooking, he buys from local producers. On his menu, you'll find sturgeon or caviar from Sologne, and cheese from Le Lieu Neuf, just a few minutes away. He also gives pride of place to Loire wines. His passion is reflected in his refined dishes.

Cependant, le service est bien trop rapide (à peine 1h30 pour 6 plats), et altère donc l'appréciation de la cuisine.
Cela gâche un restaurant qui a un très bon potentiel.
De plus, la cuisine étant ouverte, nous avons entendu toutes les remarques de la serveuse sur nous-mêmes ou d'autres clients.
