Selles-sur-Cher, situated between the Cher, Sauldre, and Canal de Berry rivers, is a charming town with a rich heritage. Take a stroll through its streets and you'll discover a 13th and 17th-century château, the royal abbey of Notre-Dame-la-Blanche, a cloister, and medieval half-timbered houses. Founded in the 6th century by Saint Eusice, the town was severely affected by the Wars of Religion. It also played host to over 3,000 Spanish refugees fleeing Franco's dictatorship. Selles-sur-Cher takes its name from its abbey, "Cellae", meaning monk's cell. The town is also renowned for its culinary specialty, Selles-sur-Cher PDO cheese. Recognizable by its bevelled disk shape and lightly greyed bluish rind, this goat's milk cheese is salted and ashed with vegetable charcoal.
