His grandfather was right to keep 25 ares of vines for him, since they were the genesis of the vocation of this young winegrower. Patrick Rolet (no link with his namesake d'Arbois) now owns 3 related hectares. Chardonnay occupies 50% of these on a clay-limestone soil which gives minerality to his white wines. For several years now, the winegrower no longer uses weedkiller and uses manure from his cows as the only amendment. 2019 will be the opportunity to start the "100% organic" approach. We liked the 2017 Côtes-du-jura Chardonnay 2017, as well as the crémant made from the same grapes. Low carbon, a good effervescence and a supple palate. But there is also a "stain" to trousseau red at Patrick Rolet, and not just any stain. A "trousseau à la Dame", an airy variety, sweeter at harvest and more resistant to rot. In the cellar this year we enjoyed the pure chardonnay crémant brut. An effervescent bubbly very apple "granny". A frank attack in the mouth with length without weight. Ideal for the aperitif.
