An atypical cooperative that reflects the determination of a community of farmers to preserve the quality of their cheeses
In Foncine-le-Haut, a cheese cooperative bears an evocative name: the Coopérative des Rebelles. This name reflects a tumultuous history, marked by the resistance of some farmers to a change of status in 2007. Today, this cheese dairy proudly defends its cooperative identity, run entirely by ten farmers who produce milk, from raw to finished product. In addition to production, the farmers are responsible for maturing and distributing the cheeses, in particular Comté, the region's flagship product.
