This traditional cheese factory is a cooperative located in the high combs near an area where the flora is the densest of France. The milk producers of the Haut-Jura continue the community spirit of fruit, based on trust, solidarity and quality demand. Originally intended to manufacture Gex's blue AOP, the cheese factory expanded its production to the county's AOP. Every morning, all year round, after the milk is collected on the farms in the vicinity, the cheese saves the milk from the montram cows, repeats the ancestral gestures of naturally transforming milk into cheese. The cheese factory has been designed to allow you to discover the work of cheese makers. Following the long tour, you will discover on-line the meticulous operations necessary for the preparation of the cheeses of AOP. Large glass windows allow you to see the different stages of milk milk transformation, the didactic tablets comment on the different manufacturing workshops and three interactive spaces invite your senses and your knowledge (audiophones and even a guide are at your disposal). Gex blue is a little unknown nucleus of the French cheese pads, manufactured in only four cheese factories. It is an authentic and traditional mountain cheese from Haut-Jura, a rare specialty that is one of the first French names distinguished in 1935. The monks of the abbey of Saint-Claude made it in the thirteenth century.
