The smell is inimitable, and perceptible from the moment you enter this store selling cured meats and specialties from the Basque region. It's hard to choose between the various hams, sausages and chorizos, or between the prepared dishes: veal axoa, cassoulet, chipirons, salmis de palombe, poulet basquaise, piperade, confit, magret... Pair with a good artisan cheese, Irouléguy wine, manzana verde or patxaran beer. For sweetness, succumb to the divine jams and jellies or the excellent Aldudes butter.
