Chef de cuisine Mathieu Martin and pastry chef Sébastien Bertin draw their inspiration from the Aquitaine region to offer an inventive menu, featuring products from the South-West and its producers: Sturia for caviar, Aléna for truffles, la baratte Bordelaise for butter...
