LES LOUVIÈRES
You are leaving the beaten paths to access the Louvières, having evolved between a few trophy lacs. Its murets of dry stones (or murgers) are the first reception committee. For centuries they have been watching the mountain chain, like you in a few moments. This restaurant, which only has meadows and wood, is a separate place. An ancient 900 m alpage farmhouse with a breathtaking interior. The decay is contemporary. Its color games, sometimes gray and silver blue, ochre and purple, plunge you into an enchanting atmosphere. Chef Philippe Vaufrey is developing a suave cuisine constantly reinvented. Among the entries, this lettuce sauce and its citrus salmon tartare as well as sweetness of asparagus to snails. In the dishes, you can see the veal laughs in the madeira and the filet of will make Lac Léman with citrus butter and roasted fogions. The map is constantly renewed and the wine cellar offers a journey of wines from all over the world. There are only 36 seats, so be careful and book.
