DOMAINE GANEVAT
Jean-François Ganevat works in biodynamie on the family business that has existed since 1650! He took it back in 1998 after making his classes as a chai master in Burgundy. Labourés soils without herbicides or fertilizers and even without grass, natural treatments, no sulphites for the vinification of reds and very little for whites… In addition to the five traditional varieties of the Jura, Jean-François Ganevat has the pleasure of working with ancient varieties such as gamay, geuch, small and big bécland… But what makes its specificity is its choice of transform the ouillé ouillé, that is, without sailing, by filling the level of the drum to compensate for evaporation and avoid the typical oxidation of Jura wines.
