This plateau cooperative lives up to its name, built right on the banks of the fishy Suran river. Resolutely modern, it groups together 20 farms that bring in 7 million litres of milk each year. If you come at 11am on Fridays in July and August, the cheesemaker organises free tours (and tastings) of his working "den". The shop, which is just as new and appetizing, is also well stocked. But for your aperitifs, choose the "Val'Herbes" range of cheeses designed to introduce your meals.

I personally recommend the Trousseau and Poulsard red wines and Comté cheese
