Founded nearly 50 years ago by foie gras goldsmith Robert Chaffanjon, the Moulin de la Molle cannery offers gourmets goose and duck foies gras from the Landes region. Today run by Annie Chaffanjon, this small, relatively confidential business supplies the region's châteaux, sells directly on site, or ships its foies gras around the world. The chef's tasting advice: thinly sliced on baguette or toasted farmhouse bread, ideally accompanied by an old Sauternes wine... Enthusiasts are in for a treat!
