Tan Dinh, "the new city," is very original. A wine cellar worthy of the large tables, distinguished on several occasions by the American Wine Spectator magazine, an elegant and sober decoration, finally a traditional but high quality table makes it a reference of the Vietnamese gastronomy in our capital. Two brothers, Robert and Freddy Vifian, both born in Saigon, are on the orders and the least we can say is that between wines and cooking they complement each other wonderfully well. The famous Pho, a beef broth seasoned with nuoc-mâm, ginger, onions or shallots, spices, with a little beef or chicken meat and chopped beef fillet, marinated in lemon sauce, spices and honey, seems to have been designed for a good Bordeaux! The same applies to Vietnamese ravioli with smoke geese. Beware, provide a cheque or cash, because the house does not accept blue cards.
