Eponymous shop in Paris offering Spanish ham and a menu of good cold cuts.
Bellota is the name given to the acorns that constitute the basic food given to free-range black-legged pigs reared for their hams. It is no coincidence, therefore, that this eponymous shop, established by Philippe Poulachon, an importer of high-end Spanish products, is one of the most advanced addresses of our capital to taste authentic Spanish ham. On the menu, you can have a treat with good sausage dishes which are a feast in particular, with a barbecued Bellota Bellota pluma (of course!) accompanied by the choice of Pimientos or mashed potatoes, a cuttlefish bone of Cantabria cooked in its ink, as well as tomato jams and wines served by the glass. We are sitting on stools, below hams hung on the ceiling exactly as in Spain. A very good address of the Iberian terroir!
