It is a 100% Spanish recipe: a grilled chopped steak of presa Bellota a la plancha, a homemade salsa concocted with crushed tomato and Espelette pepper jelly, a few salad leaves, sliced pieces of paleta (shoulder of Iberian ham Bellota) and a slice of Manchego.
